I earned my PhD in food chemistry in 2010, studying the effects of berry polyphenols on metabolic health. Since then I've built a career spanning more than 15 years across research and product-development roles — among them as a specialist researcher in early-life nutrition at a medical faculty, and as head of clinical innovation for Europe at a global ingredients company.
Over these years of research and development, my understanding of the astonishing complexity of the human body grew — along with how powerfully our environment, our diet and our daily chemical exposure affect these sensitive biological systems.

Over the course of evolution, humans have had time to adapt to many natural food sources across thousands of years. Many synthetic, heavily processed and novel compounds, by contrast, have appeared in our environment only very recently in evolutionary terms. We still don't know everything about their long-term effects.
At the same time, manufacturing processes have grown more complex, ingredient lists longer, and it has become harder for consumers to judge what they're actually buying. In the midst of a busy everyday life, few have the time or opportunity to dig deeply into a product's background.
